The Farm
Carlos manages Finca Las Brisas and Finca San Antonio, located in the Juayúa Municipality of Sonsonate. Together, they span over 119 hectares, with 98 under coffee cultivation at altitudes ranging from 1,200 to 2,030 meters above sea level.
After leaving a career in the textile industry, Carlos applied his expertise in quality control, data management, and efficiency to coffee farming. His farms serve as living laboratories — spaces for experimentation, worker education, and environmental care.
Sustainability is central to his philosophy: he minimizes chemical inputs, uses nitrogen-fixing shade trees, and promotes symbiotic fungi to enrich the soil. Each lot is processed using natural, honey, and controlled fermentation methods, drastically reducing water use while maintaining ecological balance.
The Variety :
Pacamara Natural
A true symbol of Salvadoran innovation, Pacamara is a hybrid between Pacas and the large-beaned Maragogype variety, first developed in the 1950s by El Salvador’s Institute for Coffee Research (ISIC). It is celebrated for producing exceptionally complex and expressive coffees, often with vibrant fruit profiles, deep sweetness, and an unmistakable silky body.
Carlos’s Natural processing of Pacamara brings these characteristics to their fullest expression. Whole cherries are carefully selected and sun-dried on raised beds, allowing slow fermentation that enhances the fruit-forward intensity of the variety. The result is a cup bursting with tropical fruit, red berries, and cocoa undertones, structured by a velvety mouthfeel and a lingering finish. This process, requiring meticulous control and patience, captures the soul of both the variety and Carlos’s experimental spirit — merging tradition with forward-thinking craftsmanship.
