The Bildimoo Chelchele Organic is a washed Ethiopian coffee that embodies the elegance and purity of its highland terroir. Produced at the Chelchele washing and drying station, located between 1,900 and 2,100 meters above sea level in the Gedeo Zone, this lot reflects the precision and care characteristic of southern Ethiopia’s finest coffees.
This coffee belongs to Nordic Approach’s “Bildimoo” flavor category — inspired by the clay-red soils of the region. Coffees in this profile are known for their lactic sweetness and fruit-driven vibrancy, often expressing notes of lychee, pineapple, cinnamon, cola, and ginger. The result is a cup that feels both delicate and complex, with white florals and yellow fruit notes, a silky texture, and remarkable clarity — a true celebration of Chelchele’s high-elevation terroir.

The Farm

The Chelchele Processing Site, operated by the Tadesse Desta Business Group, sits at around 2,000 meters and is equipped with an impressive infrastructure to ensure consistent quality: 14 fermentation tanks, over 130 raised drying beds, and water reservoirs capable of processing large volumes with efficiency and care.
Farmers from nearby villages deliver ripe cherries grown organically under shade. Once received, cherries are sorted, pulped, fermented, washed, and slowly dried on raised beds in the cool mountain air. Each stage is carefully monitored to preserve the coffee’s floral and fruity attributes. The result is a clean, transparent cup that reflects both the biodiversity of the Gedeo landscape and the commitment of the local producers to sustainable, organic cultivation.
