Ce café provient du village d’Elto, dans les hautes terres de Sidama en Éthiopie, où de petits producteurs cultivent leurs parcelles de café en altitude. Les cerises sont récoltées à pleine maturité puis transformées en méthode lavée dans la station locale avant un séchage lent sur lits africains surélevés. Le lot ELORA offre une tasse florale et délicatement fruitée aux notes de fleurs blanches, zest de citron et raisin blanc.

Our collaboration with Elto Coffee highlights the remarkable work of Eliyas Dukamo and Atiklit Dejene, a couple based in Sidama-Bensa who have dedicated themselves to showcasing the richness and diversity of Ethiopian terroirs. Their focus on nano-lots, ethical practices, and innovative processing methods makes every harvest a reflection of both precision and respect for the land.

Elto Coffee

Founded in the highlands of Sidama, Elto Coffee works hand-in-hand with local smallholders, selecting and processing micro-lots that express the complexity of Ethiopia’s southern regions. Their approach combines meticulous sorting, full traceability, and a commitment to sustainable agriculture — ensuring that each coffee tells the story of its community as much as its origin.

The washed process used for this lot brings out exceptional clarity. Carefully pulped, fermented, and rinsed in clean water before slow drying, it preserves the floral intensity and crisp acidity characteristic of high-elevation Sidama coffees.

This lot is the result of a close partnership between Elto Coffee and DIGS, whose commitment to transparent and ethical sourcing allows us to work directly with Eliyas and Atiklit year after year. Through DIGS, we’re able to support local farming communities while bringing expressive Ethiopian micro-lots like this Elora to our menu.
