The Farm
Carlos manages Finca Las Brisas and Finca San Antonio, located in the Juayúa Municipality of Sonsonate. Together, they span over 119 hectares, with 98 under coffee cultivation at altitudes ranging from 1,200 to 2,030 meters above sea level.
After leaving a career in the textile industry, Carlos applied his expertise in quality control, data management, and efficiency to coffee farming. His farms serve as living laboratories — spaces for experimentation, worker education, and environmental care.
Sustainability is central to his philosophy: he minimizes chemical inputs, uses nitrogen-fixing shade trees, and promotes symbiotic fungi to enrich the soil. Each lot is processed using natural, honey, and controlled fermentation methods, drastically reducing water use while maintaining ecological balance.
The Variety :
Pacas Honey
The Pacas variety is a cornerstone of Salvadoran coffee identity. Discovered in 1949 by the Pacas family in Santa Ana, this natural mutation of Bourbon is prized for its compact size and exceptional yield potential. Its shorter stature allows for denser planting and better management of nutrients, while maintaining the nuanced sweetness characteristic of its Bourbon lineage. In the cup, the Pacas Honey from Finca Las Brisas showcases delicate notes of honey, stone fruit, and floral complexity, balanced by a round body and elegant acidity.
Carlos’s honey process further enhances these qualities while reflecting his environmental ethos. The coffee is pulped but left to dry with part of the mucilage intact, allowing the natural sugars to caramelize under controlled conditions. This method reduces water use, intensifies sweetness, and delivers a clean yet syrupy texture — a testament to Carlos’s precision and respect for both flavor and sustainability.
