Finca El Pital
Fernando and Alejandra García moved from Caquetá to Huila in 2004, fleeing armed conflict in their home region. They settled in El Pital, where Fernando had family ties, and began farming from the ground up — first beans, then peaches, and eventually coffee. Over time, Finca El Pital evolved into a diversified and resilient project shaped by experience, activism, and long-term thinking.
Fernando is deeply involved in community movements opposing large-scale hydroelectric projects that threaten local livelihoods. Through trainings organized by the Diocese, he learned the value of crop diversification as a tool for economic stability and independence. Today, the farm stands as a model of balance: combining multiple crops while focusing on quality-driven coffee production.
While many producers in the region rely on common commercial varieties, Fernando chose a different path, planting Tabi alongside other uncommon cultivars. His approach prioritizes both agronomic resilience and cup quality, ensuring sustainability for his family and land.
Varietal & Process
Variety: Tabi
Process: Fully Washed
Fermentation: Depulped and oxidized for 48 hours
Drying: Sun-dried
Altitude: 1,850 m
Producers: Fernando & Alejandra García — Finca El Pital, El Pital, Huila, Colombia
Introduced in Colombia in 2002, Tabi is a cross between Typica, Bourbon, and the Timor Hybrid, developed to combine resistance to coffee leaf rust with the refined cup quality of traditional varieties. The fully washed process used here emphasizes consistency and clarity: ripe cherries are depulped, fermented through controlled oxidation for 48 hours, then washed and dried slowly.
This method highlights Tabi’s naturally round structure, gentle sweetness, and composed acidity, producing a clean and balanced expression of the variety.
Tasting Notes
🌿 Vegetal – 🍯 Brown Sugar – 🍑 Stone Fruits
A smooth and approachable cup with soft sweetness and restrained acidity. Subtle vegetal tones provide structure and freshness, layered with warm brown sugar sweetness and ripe stone fruit character. Clean, comforting, and well-balanced, with a rounded and lingering finish.
In Collaboration
During the launch of Parcel, we attended the Brussels Coffee Festival in November 2025 and spoke with Laura Meunier from Minga. She and her husband moved to Colombia to buy a finca and also represent local farmers. We were captivated by the project and especially by the taste of this washed Tabi coffee.
Behind this coffee is a true family effort. Alejandra plays a vital role in daily farm life, caring for workers, preparing meals, and ensuring smooth operations during harvest, contributions that often go unseen but are essential to the farm’s success. Together, Fernando and Alejandra embody the spirit of minga: collective work, shared responsibility, and community-driven progress. This Tabi lot is a clear reflection of that philosophy : honest, resilient, and deeply rooted in place.

Découvrez nos producteursRoasting Intensity Scale
Our scale ranges from 1 to 5, indicating the roasting intensity. A lighter roast results in brighter acidity and a more pronounced original character. Conversely, a darker roast offers lower acidity and rounder flavors. Intensity refers to the color of the bean, or the Lighttells scale. Here's a guide to when and how to use different roast levels.
