Typica Mejorado cultivé par Pepe Jijón dans la vallée d’Intag en Équateur. Séché lentement en chambres ventilées sur clayettes, ce lot développe une tasse précise et complexe, marquée par des notes de pomme verte, raisin violet et miel. Un café élégant et expressif, issu d’une ferme nichée au cœur de la forêt de nuages équatorienne.

Typica Mejorado Wave Washed
Our first collaboration with Pepe Jijón from Finca Soledad in Ecuador marks the beginning of the Parcel Torréfaction story. We met Pepe during the World Coffee Roasting Championship 2025 in Houston, where his passion for coffee and nature immediately stood out. A few months later, he sent us a small lot that perfectly reflects his approach — precise, respectful, and deeply connected to his land.
Finca Soledad
Located in the Intag Valley, north of Ecuador, Finca Soledad sits between 1 500 and 1 750 meters above sea level. The farm covers 4 hectares of coffee trees surrounded by over 120 hectares of protected cloud forest. Pepe, a former mountaineer, runs the farm with a focus on biodiversity and regeneration — planting native trees, using biodynamic methods, and creating work opportunities for his local community.

The Wave Washed process combines careful fermentation and gentle washing in several “waves” of clean water, followed by slow drying in a dark room. It’s a precise and patient method that highlights the natural clarity and sweetness of the coffee.
Tasting Notes

A clean and juicy cup with bright fruit notes, soft sweetness, and a smooth texture. Refreshing and balanced, it’s a great example of the elegance found in Ecuador’s high-altitude coffees.
